½ cup dried green split peas
â…“ cup beef bouillon granules (or veggie for vegetarian version)
¼ cup pearl barley
½ cup dried lentils
¼ cup dried minced onion
2 teaspoons Italian seasoning
½ cup uncooked long-grain white rice
2 bay leaves
½ cup small pasta (like ditalini or elbow macaroni) — bagged separately and placed on top inside the jar
In a large pot, brown 1 pound of ground beef (or turkey/veggie alternative) over medium heat. Drain fat.
Add 1 (28-ounce) can diced tomatoes, 1 (6-ounce) can tomato paste, and 3 quarts of water. Stir well.
Add the contents of the jar, except the pasta. Bring to a boil, reduce heat, cover, and simmer for 45 minutes.
Stir in the pasta and cook for 15–20 minutes more, until pasta and legumes are tender.
Season with black pepper or extra herbs to taste. Serve hot!
