Fritos Chili Cheese Salad is a crunchy, cheesy, and flavor-packed dish that’s perfect for potlucks, BBQs, or an easy weeknight meal. With fresh lettuce, hearty chili, crispy Fritos, and plenty of cheese, this salad is a fun and delicious way to enjoy classic chili flavors in a lighter, crunchier way!

Ingredients

  • 1 large head romaine lettuce (or iceberg), chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely diced
  • 1/2 cup bell pepper (red or green), chopped
  • 1 (10 oz) bag chili cheese Fritos, slightly crushed
  • 1 cup shredded cheddar cheese
  • 1/2 cup black beans (optional, drained & rinsed)
  • 1/2 cup corn kernels (optional, fresh or canned)

For the Dressing:

  • 1/2 cup ranch dressing
  • 1/4 cup sour cream (or Greek yogurt)
  • 1 tbsp taco seasoning
  • 1 tsp lime juice (optional)

Instructions

  1. Prepare the Dressing:

    • In a small bowl, whisk together ranch dressing, sour cream, taco seasoning, and lime juice until smooth.
  2. Assemble the Salad:

    • In a large bowl, combine chopped lettuce, tomatoes, red onion, bell peppers, black beans, corn, and shredded cheese.
  3. Toss with Dressing:

    • Pour the dressing over the salad and toss until well coated.
  4. Add the Fritos:

    • Right before serving, mix in crushed chili cheese Fritos to keep them crunchy.
  5. Serve & Enjoy!

    • Garnish with extra cheese or a squeeze of lime if desired.
