Ingredients

  • 1 cup (150g) fresh or frozen blackberries
  • 2 tablespoons honey or simple syrup (adjust to taste)
  • ½ cup (120ml) fresh lime juice (about 4 limes)
  • 1 cup (240ml) ginger beer (non-alcoholic)
  • 2 cups (240g) ice cubes
  • ½ cup (120ml) sparkling water or club soda
  • Fresh mint leaves and lime wedges (for garnish)

Instructions

  • Blend the Blackberries:
    • In a blender, combine the blackberries, honey (or simple syrup), lime juice, and 1 cup of ice. Blend until smooth.
  • Strain the Mixture (Optional):
    • If you prefer a smoother drink, strain the blackberry mixture through a fine-mesh sieve to remove the seeds.
  • Assemble the Drink:
    • Divide the blackberry mixture evenly among 2-4 glasses filled with ice.
    • Top each glass with ginger beer and a splash of sparkling water or club soda. Stir gently to combine.
  • Garnish and Serve:
    • Garnish with fresh mint leaves and a lime wedge for a festive touch. Serve immediately.
