These Fudgy Brownies with Coconut Frosting are ultra-rich, dense, and loaded with deep chocolate flavor. The creamy coconut frosting adds a sweet, nutty contrast that makes every bite irresistible!

For the Brownies:

  • 1 cup unsalted butter, melted
  • 1 ½ cups granulated sugar
  • ½ cup brown sugar, packed
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ¾ cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon baking powder
  • ½ cup chocolate chips (optional, for extra fudginess)

For the Coconut Frosting:

  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • ¼ cup heavy cream (or milk)
  • 1 teaspoon vanilla extract
  • 1 ½ cups sweetened shredded coconut

Optional Topping:

  • ¼ cup toasted coconut flakes (for extra texture)
  • ¼ cup chocolate drizzle (for decoration)

 


Instructions

Step 1: Make the Brownies

  1. Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
  2. In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth.
  3. Add eggs and vanilla extract, whisking until fully combined.
  4. Sift in cocoa powder, flour, salt, and baking powder. Stir until just combined (do not overmix).
  5. Fold in chocolate chips, if using.
  6. Pour the batter into the prepared baking dish and bake for 30-35 minutes, until a toothpick inserted in the center comes out with a few moist crumbs.
  7. Let brownies cool completely before frosting.

Step 2: Make the Coconut Frosting

  1. In a medium bowl, beat butter until creamy.
  2. Add powdered sugar, heavy cream, and vanilla extract, mixing until smooth and fluffy.
  3. Stir in shredded coconut until well combined.

Step 3: Assemble & Serve

  1. Spread the coconut frosting evenly over the cooled brownies.
  2. Sprinkle with toasted coconut flakes and drizzle with melted chocolate if desired.
  3. Slice into squares and enjoy!

 


Notes

  • For extra coconut flavor, add ½ teaspoon coconut extract to the frosting.
