Funfetti Popcorn is a colorful, sweet treat that combines buttery popcorn with a creamy white chocolate coating and a festive sprinkle of rainbow sprinkles. Perfect for parties, movie nights, or just as a fun snack to brighten your day, this recipe is easy to make and irresistibly delicious!

  • 10 cups popped popcorn (about 1/2 cup unpopped kernels)
  • 1 cup white chocolate chips (or candy melts)
  • 2 tbsp unsalted butter
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/3 cup rainbow sprinkles

Instructions

  1. Prepare the Popcorn:
    • Pop the popcorn using your preferred method (air-popped or stovetop).
    • Spread the popcorn onto a large baking sheet lined with parchment paper. Remove any unpopped kernels.
  2. Melt the Chocolate:
    • In a microwave-safe bowl, combine white chocolate chips and butter. Microwave in 20–30 second intervals, stirring after each, until the chocolate is fully melted and smooth.
    • Stir in the vanilla extract and salt.
  3. Coat the Popcorn:
    • Drizzle the melted chocolate mixture over the popcorn. Gently toss the popcorn with a spatula or your hands (wear gloves if preferred) to coat evenly.
  4. Add Sprinkles:
    • While the chocolate is still wet, sprinkle the rainbow sprinkles generously over the popcorn. Gently toss again to distribute.
  5. Set and Serve:
    • Allow the popcorn to set at room temperature for 30 minutes, or refrigerate for 10–15 minutes to speed up the process.
    • Break apart any large clumps and serve in bowls or treat bags.

  • For added crunch, mix in pretzels, mini marshmallows, or peanuts before drizzling the chocolate.
