A creamy, garlicky aioli that’s perfect as a dip, spread, or sauce—rich in flavor with a silky texture and simple to make.

Ingredients

  • 1 cup mayonnaise (preferably homemade or high-quality)
  • 23 garlic cloves, minced or pressed
  • 1 tbsp fresh lemon juice
  • 1 tsp Dijon mustard
  • ½ tsp sea salt (adjust to taste)
  • ¼ tsp freshly ground black pepper
  • 2 tbsp extra-virgin olive oil (optional, for extra richness)

Instructions

  1. In a small bowl, combine mayonnaise, minced garlic, lemon juice, and Dijon mustard.
  2. Whisk until smooth and the garlic is evenly distributed.
  3. Slowly drizzle in olive oil while whisking, if using, to emulsify and add richness.
  4. Season with salt and pepper, then taste and adjust seasoning or lemon juice as needed.
  5. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  6. Serve as a dip for fries, veggies, a spread for sandwiches, or dolloped on grilled meats or seafood.

  • For a stronger garlic kick, grate garlic on a microplane.
  • Use roasted garlic for a milder, sweeter flavor.
  • Substitute lime juice for a zesty twist.
