  • 4 boneless, skinless chicken thighs or breasts
  • 1 lb baby potatoes, halved (or quartered if large)
  • 3 tbsp olive oil, divided
  • 3 tbsp unsalted butter
  • 4 garlic cloves, minced
  • 1 tsp smoked paprika
  • 1 tsp dried thyme or rosemary
  • 1/2 tsp onion powder
  • Salt and black pepper, to taste
  • 1/4 cup chicken broth or water (optional, for deglazing)
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  1. Season the Chicken:
    • Pat the chicken dry with paper towels. Season both sides with smoked paprika, onion powder, salt, and pepper.
  2. Cook the Potatoes:
    • Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the potatoes, cut side down, and cook for 6–8 minutes, stirring occasionally, until golden and crispy. Season with salt and pepper. Remove the potatoes from the skillet and set aside.
  3. Sear the Chicken:
    • In the same skillet, add the remaining olive oil. Sear the chicken on both sides over medium-high heat, about 4–5 minutes per side, until golden brown and cooked through (internal temperature of 165°F). Remove the chicken and set aside.
  4. Make the Garlic Butter Sauce:
    • Lower the heat to medium and add the butter to the skillet. Once melted, stir in the minced garlic and cook for 1 minute until fragrant.
    • If the skillet is dry, deglaze with chicken broth or water, scraping up any browned bits for extra flavor.
  5. Combine and Finish:
    • Return the potatoes and chicken to the skillet. Toss to coat everything in the garlic butter sauce. Cook for an additional 2–3 minutes to heat through.
  6. Serve:
    • Garnish with fresh parsley and serve hot. Pair with a side of green beans, salad, or steamed vegetables for a complete meal.
