1 lb boneless, skinless chicken breast, cut into bite-sized pieces
8 oz pasta (penne, fusilli, or your choice)
2 tablespoons olive oil
3 tablespoons unsalted butter
4 cloves garlic, minced
1 teaspoon Italian seasoning
Salt and pepper to taste
1/4 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
Optional: red pepper flakes for heat
Instructions
Cook pasta according to package instructions. Drain and set aside.
Season chicken bites with salt, pepper, and Italian seasoning.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden and cooked through, about 6-8 minutes. Remove from skillet and set aside.
In the same skillet, reduce heat to medium. Add butter and garlic, and sauté for 1 minute until fragrant.
Return chicken to the skillet and toss to coat with garlic butter.
Add cooked pasta to the skillet, tossing everything together until well mixed.
Sprinkle with Parmesan cheese and chopped parsley. Add red pepper flakes if desired.
Serve warm and enjoy!
Notes
Use chicken thighs for a juicier texture if preferred.
