For the Garlic Butter Chicken:

  • 4 boneless, skinless chicken breasts or thighs
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter (divided)
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon paprika (optional)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

For the Parmesan Rice:

  • 1 cup long-grain white rice (jasmine or basmati works well)
  • 2 ½ cups chicken broth
  • ½ cup grated Parmesan cheese
  • 2 tablespoons butter
  • ½ teaspoon garlic powder
  • Salt and pepper, to taste

Instructions

1. Cook the chicken:

  • Season the chicken on both sides with salt, pepper, Italian seasoning, and paprika.
  • In a large skillet over medium-high heat, heat olive oil and 2 tablespoons of butter.
  • Add the chicken and sear for 5-7 minutes per side, or until golden brown and cooked through (internal temperature should reach 75°C/165°F).
  • Remove the chicken from the pan and set aside, covering it to keep warm.

2. Make the garlic butter sauce:

  • In the same skillet, melt the remaining butter and add the minced garlic.
  • Cook for 1-2 minutes until fragrant.
  • Return the chicken to the skillet, spoon the garlic butter over the chicken, and cook for another minute.

3. Prepare the Parmesan rice:

  • In a separate saucepan, melt butter over medium heat.
  • Add the rice and stir for 1-2 minutes until lightly toasted.
  • Pour in the chicken broth, garlic powder, salt, and pepper.
  • Bring to a boil, reduce the heat to low, cover, and simmer for 15-18 minutes until the rice is tender and the liquid is absorbed.
  • Stir in the grated Parmesan cheese until creamy and combined.

4. Serve:

  • Plate the Parmesan rice, then top with the garlic butter chicken.
  • Drizzle extra garlic butter sauce from the skillet over the top.
  • Garnish with chopped parsley and extra Parmesan if desired.
