For the Pork Bites:
  • 1.5 lbs pork tenderloin or boneless pork chops, cut into 1-inch cubes
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped (for garnish)
For the Lemon Green Beans:

  • 12 oz (340g) fresh green beans, trimmed
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 cloves garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp red pepper flakes (optional)

Instructions

1. Cook the Pork Bites:
  1. Season the pork: In a bowl, toss the pork cubes with salt, black pepper, smoked paprika, and garlic powder.
  2. Sear the pork: Heat olive oil in a large skillet over medium-high heat. Add pork in a single layer and cook for 2-3 minutes per side until golden brown and cooked through (internal temp of 145°F/63°C). Remove from the pan and set aside.
  3. Make the garlic butter sauce: Reduce heat to medium, add butter to the skillet, and let it melt. Stir in minced garlic and cook for 30 seconds until fragrant. Return pork to the pan and toss to coat in the garlic butter. Sprinkle with chopped parsley.
2. Cook the Lemon Green Beans:
  1. In a separate skillet, heat olive oil and butter over medium heat. Add minced garlic and sauté for 30 seconds.
  2. Add green beans, salt, black pepper, and red pepper flakes. Cook for 4-5 minutes until tender-crisp.
  3. Stir in lemon juice and lemon zest. Toss to coat and remove from heat.
3. Serve & Enjoy:

  • Plate the pork bites with the lemon green beans on the side. Serve warm and enjoy!

Notes

  • You can swap pork for chicken or beef if desired.
  • For extra crispiness, sear the pork in batches to avoid overcrowding the pan.
  • If you prefer softer green beans, cover the pan for 1-2 minutes while cooking.
