  • 2 pounds sweet potatoes, peeled and cubed
  • 3 tablespoons unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme or rosemary (optional)
  • Chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss the cubed sweet potatoes with melted butter, olive oil, garlic, salt, pepper, and thyme or rosemary if using.
  3. Spread sweet potatoes in a single layer on the prepared baking sheet.
  4. Roast for 30–35 minutes, stirring halfway through, until sweet potatoes are golden and fork-tender.
  5. Garnish with chopped parsley if desired and serve warm.
