- 1 lb smoked sausage or kielbasa, sliced into 1/2-inch rounds
- 2 tbsp butter
- 3 cloves garlic, minced
- 1/2 tsp red pepper flakes (optional)
- 8 oz fettuccine or pasta of choice
- 1 tbsp olive oil
- 1 cup heavy cream
- 3/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 1/4 cup chopped parsley (optional for garnish)
- Cook pasta according to package instructions. Reserve 1/2 cup pasta water, then drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add sliced sausage and cook until browned, about 4–5 minutes. Remove and set aside.
- In the same skillet, melt butter and sauté garlic and red pepper flakes for 1–2 minutes until fragrant.
- Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and season with salt and pepper.
- Add cooked pasta to the skillet and toss to coat. If sauce is too thick, add a bit of reserved pasta water to loosen.
- Return sausage to the skillet and stir to combine. Cook for another 1–2 minutes until heated through.
- Garnish with chopped parsley and serve warm.
