Savory sausage bites seared in garlic butter served over rich and creamy Parmesan pasta – a quick and comforting dish perfect for weeknight dinners.

Ingredients

  • 1 lb smoked sausage or kielbasa, sliced into 1/2-inch rounds
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes (optional)
  • 8 oz fettuccine or pasta of choice
  • 1 tbsp olive oil
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/4 cup chopped parsley (optional for garnish)

Instructions

  1. Cook pasta according to package instructions. Reserve 1/2 cup pasta water, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced sausage and cook until browned, about 4–5 minutes. Remove and set aside.
  3. In the same skillet, melt butter and sauté garlic and red pepper flakes for 1–2 minutes until fragrant.
  4. Pour in heavy cream and bring to a gentle simmer. Stir in Parmesan cheese and season with salt and pepper.
  5. Add cooked pasta to the skillet and toss to coat. If sauce is too thick, add a bit of reserved pasta water to loosen.
  6. Return sausage to the skillet and stir to combine. Cook for another 1–2 minutes until heated through.
  7. Garnish with chopped parsley and serve warm.

Notes

  • Use andouille sausage for a spicy kick.
  • Substitute half-and-half for a lighter cream sauce.
  • Add spinach or mushrooms for extra vegetables.
