- 8 oz linguine or spaghetti
- 1 lb large shrimp, peeled and deveined
- 3 tbsp unsalted butter
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/4 tsp red pepper flakes (optional)
- 1/4 cup dry white wine or chicken broth
- 1 tbsp fresh lemon juice
- Salt and black pepper to taste
- 2 tbsp chopped fresh parsley
- Freshly grated Parmesan cheese (optional)
- Cook pasta in a large pot of salted boiling water according to package directions. Reserve 1/2 cup of pasta water, then drain and set aside.
- In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat. Add garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.
- Add shrimp to the skillet in a single layer. Cook for 1–2 minutes per side until pink and opaque. Remove shrimp and set aside.
- Deglaze the skillet with white wine or chicken broth and lemon juice. Simmer for 2 minutes to reduce slightly.
- Return shrimp to the skillet and add the remaining tablespoon of butter. Toss to coat.
- Add cooked pasta and a bit of reserved pasta water to loosen the sauce if needed. Toss everything together until well combined.
- Season with salt and pepper to taste. Garnish with parsley and Parmesan cheese if desired. Serve immediately.
Notes
- Use fresh or frozen (thawed) shrimp — just make sure they are fully peeled and deveined.
- Don’t overcook shrimp; they cook quickly and become rubbery if overdone.
- Serve with crusty bread or a side salad for a complete meal.
