Garlic Butter Shrimp Scampi Pasta is a quick and elegant dish featuring juicy shrimp sautéed in garlic butter and tossed with pasta and fresh lemon juice for a bright and flavorful meal.

  • 8 oz linguine or spaghetti
  • 1 lb large shrimp, peeled and deveined
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup dry white wine or chicken broth
  • 1 tbsp fresh lemon juice
  • Salt and black pepper to taste
  • 2 tbsp chopped fresh parsley
  • Freshly grated Parmesan cheese (optional)

Instructions

  1. Cook pasta in a large pot of salted boiling water according to package directions. Reserve 1/2 cup of pasta water, then drain and set aside.
  2. In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat. Add garlic and red pepper flakes (if using) and sauté for about 1 minute until fragrant.
  3. Add shrimp to the skillet in a single layer. Cook for 1–2 minutes per side until pink and opaque. Remove shrimp and set aside.
  4. Deglaze the skillet with white wine or chicken broth and lemon juice. Simmer for 2 minutes to reduce slightly.
  5. Return shrimp to the skillet and add the remaining tablespoon of butter. Toss to coat.
  6. Add cooked pasta and a bit of reserved pasta water to loosen the sauce if needed. Toss everything together until well combined.
  7. Season with salt and pepper to taste. Garnish with parsley and Parmesan cheese if desired. Serve immediately.

Notes

  • Use fresh or frozen (thawed) shrimp — just make sure they are fully peeled and deveined.
  • Don’t overcook shrimp; they cook quickly and become rubbery if overdone.
  • Serve with crusty bread or a side salad for a complete meal.
