1 lb boneless, skinless chicken breast, diced
1 lb potato gnocchi
3 tbsp olive oil
4 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
2 cups baby spinach
Salt and pepper to taste
1 tsp Italian seasoning
Fresh parsley, chopped for garnish
Instructions
Heat 2 tablespoons of olive oil in a large skillet over medium heat.
Season the diced chicken with salt, pepper, and Italian seasoning, then cook until golden and fully cooked. Remove from skillet and set aside.
In the same skillet, add the remaining olive oil and sauté the minced garlic until fragrant.
Add the gnocchi and cook for 2-3 minutes until lightly golden.
Pour in the chicken broth and heavy cream, stirring to combine.
Add the cooked chicken back to the skillet and simmer until the sauce thickens, about 5 minutes.
Stir in the Parmesan cheese and baby spinach, cooking until the spinach wilts.
Garnish with fresh parsley and serve hot.
Notes
Use pre-cooked gnocchi to speed up the process.
For a lighter version, substitute half-and-half for heavy cream.
Add mushrooms or sun-dried tomatoes for extra flavor.
