A creamy and flavorful garlic mushroom pasta, perfect for a comforting and quick vegetarian meal.

  • 200g pasta (spaghetti or fettuccine)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 250g mushrooms, sliced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon chili flakes (optional)
  • 1/2 cup vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add garlic and sauté for 1 minute until fragrant.
  4. Add sliced mushrooms and cook for 5-7 minutes until browned and tender.
  5. Season with salt, black pepper, and chili flakes if using.
  6. Pour in the vegetable broth and let it simmer for 2 minutes.
  7. Stir in the heavy cream and bring to a gentle simmer.
  8. Add the Parmesan cheese and stir until melted and combined.
  9. Add the cooked pasta and toss to coat evenly with the sauce.
  10. Garnish with fresh parsley and serve hot.

Notes

  • You can use any type of mushrooms like cremini, button, or shiitake.
  • For a vegan version, substitute heavy cream with coconut cream and use vegan cheese.
  • Add spinach or peas for extra veggies.
