These Garlic Parmesan Chicken Meatloaves are a flavorful twist on a classic comfort food. Mini meatloaves packed with garlic, Parmesan, and herbs are baked to perfection and topped with a cheesy crust. Serve them with a side of mashed potatoes or roasted veggies for a complete meal.

Ingredients

  • 1 lb (450 g) ground chicken
  • 1/2 cup (50 g) breadcrumbs (plain or Italian-seasoned)
  • 1/3 cup (30 g) grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup (60 ml) milk
  • 1/4 cup (25 g) shredded mozzarella cheese (for topping)

For Garnish:

  • Fresh parsley, chopped
  • Additional Parmesan cheese

Instructions

1. Preheat the Oven:

  1. Preheat your oven to 375°F (190°C). Line a baking sheet or lightly grease a muffin tin for easy cleanup.

2. Make the Meatloaf Mixture:

  1. In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, egg, garlic, Italian seasoning, salt, black pepper, and milk. Mix gently until just combined—don’t overmix to keep the meatloaves tender.

3. Shape the Meatloaves:

  1. Divide the mixture into 4–6 equal portions and shape them into mini meatloaves. Place them on the prepared baking sheet or into the muffin tin.

4. Bake the Meatloaves:

  1. Bake in the preheated oven for 20 minutes.

5. Add the Cheese Topping:

  1. Remove the meatloaves from the oven and sprinkle shredded mozzarella cheese on top of each one. Return to the oven and bake for an additional 5–7 minutes, or until the cheese is melted and the internal temperature of the meatloaves reaches 165°F (74°C).

6. Garnish and Serve:

  1. Sprinkle the meatloaves with fresh parsley and additional Parmesan cheese before serving. Pair with mashed potatoes, roasted vegetables, or a simple side salad.


Notes

  • Substitute ground chicken with ground turkey if preferred.
  • Add a kick of spice by mixing 1/4 teaspoon red pepper flakes into the meatloaf mixture.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months.
