Scale

For the Chicken:

  • 1 lb boneless, skinless chicken breasts (or thighs), cut into bite-sized pieces
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • 1 tbsp olive oil

For the Tortellini & Sauce:

  • 1 (20 oz) package cheese tortellini (fresh or frozen)
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • ½ cup chicken broth
  • ¾ cup grated Parmesan cheese
  • ½ tsp red pepper flakes (optional, for spice)
  • ½ tsp Italian seasoning
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

Step 1: Cook the Chicken

  1. Season the chicken pieces with salt, black pepper, garlic powder, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken and cook for 5-7 minutes, until golden brown and cooked through. Remove from the pan and set aside.

Step 2: Cook the Tortellini

  1. Bring a pot of salted water to a boil and cook tortellini according to package instructions. Drain and set aside.

Step 3: Make the Garlic Parmesan Sauce

  1. In the same skillet, melt butter over medium heat.
  2. Add garlic and sauté for 30 seconds until fragrant.
  3. Pour in heavy cream and chicken broth, stirring to combine.
  4. Stir in Parmesan cheese, red pepper flakes, and Italian seasoning. Simmer for 3 minutes, until the sauce thickens.

Step 4: Combine Everything

  1. Return cooked chicken and tortellini to the skillet, tossing to coat in the sauce.
  2. Simmer for 2 minutes, allowing flavors to meld.

Step 5: Serve & Enjoy

  1. Garnish with fresh parsley and extra Parmesan cheese.
  2. Serve warm with garlic bread or a side salad.

Notes

  • Lighter Option: Use half-and-half instead of heavy cream.
  • Make It Spicier: Add extra red pepper flakes or ½ tsp cayenne pepper.
  • Protein Swap: Use shrimp or Italian sausage instead of chicken.
  • Storage: Refrigerate for up to 3 days. Reheat on the stove with a splash of broth.
