Garlic-Parmesan Melting Cabbage is a savory and tender side dish made by slow-roasting thick cabbage slices in a buttery garlic broth and topping them with golden, melted Parmesan cheese for a comforting and flavorful twist on roasted vegetables.

  • 1 medium green cabbage, cut into 1-inch thick rounds
  • 4 tbsp unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 cup low-sodium vegetable or chicken broth
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
  2. Arrange cabbage rounds in a single layer in the baking dish.
  3. In a small bowl, combine melted butter and minced garlic. Brush mixture over the cabbage slices.
  4. Pour broth into the baking dish around the cabbage (not over the top).
  5. Season cabbage with salt and pepper to taste.
  6. Cover tightly with foil and roast for 25 minutes.
  7. Remove foil, sprinkle Parmesan evenly over the cabbage, and continue roasting uncovered for 20–25 minutes, or until cabbage is tender and cheese is golden and melted.
  8. Garnish with chopped parsley before serving.

  • Use purple cabbage for a colorful variation.
  • Add red pepper flakes for a hint of spice.
  • Serve with roast meats or over grains for a hearty vegetarian meal.
  • Can be made ahead and reheated in the oven at 350°F for 10–15 minutes.
