Crispy on the outside and tender on the inside, these roasted Brussels sprouts are tossed with garlic and Parmesan for a savory side dish that’s easy to prepare and incredibly delicious. Perfect for weeknight dinners or holiday meals!

  • 1 lb (450g) Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ teaspoon paprika (optional)
  • ¼ cup (25g) grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (for garnish, optional)

Instructions

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. Prepare the Brussels Sprouts:
    • In a large bowl, toss the halved Brussels sprouts with olive oil, minced garlic, salt, pepper, and paprika if using.
  3. Arrange on the Baking Sheet:
    • Spread the Brussels sprouts in a single layer on the prepared baking sheet, cut side down. This helps them achieve a nice caramelized exterior.
  4. Roast:
    • Roast in the preheated oven for 20-25 minutes, or until the Brussels sprouts are tender and the edges are golden and crispy. Shake the pan halfway through cooking to ensure even roasting.
  5. Add the Parmesan:
    • Remove the baking sheet from the oven and sprinkle the grated Parmesan cheese evenly over the Brussels sprouts. Return to the oven for an additional 5 minutes, or until the cheese is melted and slightly golden.
  6. Serve:
    • Transfer the roasted Brussels sprouts to a serving dish and garnish with fresh parsley if desired. Serve warm.

 


Notes

  • For added crunch, toss in some toasted breadcrumbs along with the Parmesan.
  • Adjust seasoning to taste—add a dash of chili flakes for a spicy kick!
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven for best results.
