These Garlic Roasted Cherry Tomatoes are sweet, juicy, and packed with rich, caramelized flavor. Roasting enhances their natural sweetness, while garlic and herbs add a delicious depth. Perfect as a topping for pasta, bruschetta, salads, or as a side dish!

Ingredients

  • 2 pints (about 4 cups) cherry or grape tomatoes (halved)
  • 3 tbsp olive oil
  • 3 cloves garlic (minced or thinly sliced)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried oregano (or 1 tbsp fresh, chopped)
  • ½ tsp red pepper flakes (optional, for a little heat)
  • 1 tbsp balsamic vinegar (for extra depth, optional but recommended)
  • ¼ cup fresh basil or parsley (chopped, for garnish)

Instructions

Step 1: Prep the Tomatoes

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the halved cherry tomatoes with olive oil, garlic, salt, black pepper, oregano, and red pepper flakes.

Step 2: Roast the Tomatoes

  1. Spread the tomatoes cut side up on a lined baking sheet (parchment paper or foil helps with easy cleanup).
  2. Roast for 20-25 minutes, until soft, slightly wrinkled, and caramelized.
  3. Remove from oven and drizzle with balsamic vinegar, tossing gently.

Step 3: Garnish & Serve

  1. Sprinkle with fresh basil or parsley before serving.
  2. Serve warm or at room temperature over pasta, bruschetta, grilled meats, or salads.

Notes

  • Extra Crispy? Roast at 425°F for deeper caramelization.
  • No Cherry Tomatoes? Use Roma or grape tomatoes, cut into small chunks.
