These Garlic Sesame Noodles are quick, flavorful, and packed with a savory, nutty, and garlicky sauce. They make the perfect side dish or light meal and can be served warm or cold. Ready in just 15 minutes!

For the Noodles:

  • 8 oz spaghetti, ramen, or rice noodles
  • 1 tablespoon sesame oil (to prevent sticking)

For the Garlic Sesame Sauce:

  • 3 tablespoons soy sauce (low-sodium recommended)
  • 1 tablespoon rice vinegar (or lime juice)
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon honey or maple syrup (for balance)
  • 1 teaspoon Sriracha or chili flakes (optional, for heat)
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon peanut butter or tahini (optional, for extra creaminess)

For Garnish:

  • 2 tablespoons toasted sesame seeds
  • 2 green onions, chopped
  • ½ cup shredded carrots (optional)
  • ¼ cup chopped peanuts or cashews
  • Fresh cilantro or basil (optional)

Instructions

Step 1: Cook the Noodles

  1. Cook noodles according to package instructions.
  2. Drain and toss with 1 tablespoon sesame oil to prevent sticking.

Step 2: Make the Sauce

  1. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, Sriracha, garlic, ginger, and peanut butter (if using).

Step 3: Toss & Serve

  1. Pour the garlic sesame sauce over the cooked noodles and toss until evenly coated.
  2. Garnish with sesame seeds, green onions, carrots, peanuts, and fresh herbs.
  3. Serve warm or chilled and enjoy!

Notes
