  • 2 tablespoons brown sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup (240 ml) milk
  • 2 large eggs
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons molasses
  • 1 teaspoon vanilla extract
  • Butter or cooking spray, for greasing

For Decorating:

  • Icing or frosting (for piping)
  • Mini chocolate chips, sprinkles, or candy buttons

Instructions

🥄 Make the Pancake Batter:

  1. Mix Dry Ingredients:

    • In a large bowl, whisk together flour, brown sugar, baking powder, cinnamon, ginger, cloves, nutmeg, and salt.
  2. Combine Wet Ingredients:

    • In a separate bowl, whisk together milk, eggs, melted butter, molasses, and vanilla extract until smooth.
  3. Combine Wet and Dry Ingredients:

    • Pour the wet ingredients into the dry ingredients and stir until just combined.
    • Avoid overmixing; a few lumps are okay.

🍳 Cook the Pancakes:

  1. Preheat the Griddle:

    • Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
  2. Create Gingerbread Shapes:

    • Pour the batter onto the skillet using a squeeze bottle or a gingerbread man-shaped pancake mold.
    • Cook until bubbles form on the surface and the edges look set (2-3 minutes).
  3. Flip and Finish:

    • Carefully flip the pancake and cook for another 1-2 minutes until golden brown.
  4. Repeat:

    • Continue with the remaining batter, keeping cooked pancakes warm in a low oven if needed.

🎨 Decorate the Pancakes:

  1. Add Icing and Toppings:
    • Use icing or frosting to pipe faces, buttons, and designs onto the gingerbread men.
    • Add mini chocolate chips, sprinkles, or candy for extra fun!

🍽️ Serve:

  1. Plate and Enjoy:

    • Serve warm with a drizzle of maple syrup or a dusting of powdered sugar.
  2. Serving Suggestions:

    • Pair with fresh fruit, a dollop of whipped cream, or a side of bacon or sausage for a full holiday breakfast.

Notes

  • No Mold? No Problem! Use a squeeze bottle to draw the gingerbread shape directly on the griddle.
  • Make Ahead: You can make the batter the night before and store it in the refrigerator. Stir gently before using.
  • Storage: Store leftover pancakes in an airtight container in the refrigerator for up to 3 days or freeze for up to 1 month.
