Tender, buttery biscuits baked in a pool of melted butter, studded with fresh blueberries and topped with a sweet vanilla glaze — a delicious twist on classic butter swim biscuits.

  • 2 1/2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 cups buttermilk
  • 1/2 cup unsalted butter, melted
  • 1 cup fresh or frozen blueberries
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 450°F (230°C). Pour melted butter into a 9×9-inch baking dish.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Pour in the buttermilk and stir until just combined. Gently fold in the blueberries.
  4. Pour the batter over the melted butter in the baking dish. Use a spatula to spread it evenly; do not stir.
  5. Use a knife to score the dough into 9 squares.
  6. Bake for 25-30 minutes or until golden brown on top.
  7. While biscuits are baking, whisk together powdered sugar, milk, and vanilla extract to make the glaze.
  8. Remove biscuits from the oven and let cool slightly. Drizzle glaze over warm biscuits before serving.

Notes

  • Use fresh or frozen blueberries; if using frozen, do not thaw before adding.
  • For extra flavor, add a bit of lemon zest to the batter or glaze.
  • Store leftovers covered at room temperature for up to 2 days.
