This Golumpki Soup (Stuffed Cabbage Soup) is a hearty and comforting Polish-inspired dish that brings all the flavors of traditional stuffed cabbage rolls (golumpki) into an easy, one-pot meal. Made with ground beef, cabbage, rice, and tomatoes, this soup is rich, filling, and perfect for a cozy dinner!

  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 4 cups green cabbage (chopped)
  • 1 (14.5 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 4 cups beef broth
  • 1/2 cup uncooked white rice (long grain)
  • 1 tsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • 1 tbsp brown sugar (optional, for sweetness)
  • 1 tbsp apple cider vinegar (for a tangy kick)

Instructions

Step 1: Cook the Ground Beef

  1. In a large Dutch oven or soup pot, cook ground beef and onion over medium-high heat until browned.
  2. Drain excess grease and stir in garlic, cooking for 1 minute until fragrant.

Step 2: Add the Cabbage & Liquids

  1. Add chopped cabbage, diced tomatoes, tomato sauce, beef broth, Worcestershire sauce, salt, pepper, paprika, thyme, brown sugar, and vinegar.
  2. Stir well and bring to a boil.

Step 3: Simmer the Soup

  1. Reduce heat to low, cover, and let simmer for 20 minutes, allowing the cabbage to soften.

Step 4: Add the Rice

  1. Stir in uncooked rice and simmer for an additional 15 minutes, or until the rice is tender.
  2. Stir occasionally to prevent sticking.

Step 5: Serve and Enjoy!

  • Ladle into bowls and serve hot.
  • Optional: Garnish with fresh parsley or a dollop of sour cream.
