This indulgent Gooey Brownie Pie combines a rich, fudgy brownie filling with a buttery crust for the ultimate chocolate lover’s dessert. Serve it warm with a scoop of vanilla ice cream for pure bliss!

Ingredients

Scale

For the Crust:

  • 1 unbaked 9-inch pie crust (store-bought or homemade)

For the Brownie Filling:

  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • ½ cup brown sugar, packed
  • ¾ cup unsweetened cocoa powder
  • ½ teaspoon salt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour
  • ½ cup semi-sweet chocolate chips

Instructions

  1. Prepare the Pie Crust:
    • Preheat your oven to 350°F (175°C).
    • Fit the pie crust into a 9-inch pie pan, crimping the edges as desired. Set aside.
  2. Make the Brownie Filling:
    • In a large mixing bowl, whisk together the melted butter, granulated sugar, and brown sugar until smooth.
    • Add the cocoa powder and salt, mixing until well combined.
    • Whisk in the eggs and vanilla extract until the mixture is smooth and glossy.
    • Stir in the flour until just combined, then fold in the chocolate chips.
  3. Assemble the Pie:
    • Pour the brownie batter into the prepared pie crust, spreading it out evenly.
  4. Bake:
    • Bake in the preheated oven for 35–40 minutes, or until the edges are set and the center is slightly jiggly (it will set as it cools).
    • Let the pie cool for at least 30 minutes before slicing for clean slices, or serve warm for a gooey texture.
  5. Serve:
    • Top with a scoop of vanilla ice cream, whipped cream, or a drizzle of chocolate syrup for an extra indulgent treat.

Notes

  • Store leftovers in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days.
  • For an even gooier center, reduce the baking time by 2–3 minutes.
  • Add chopped nuts or swirl in peanut butter for extra flavor.
