These Gooey Caramel-Stuffed Cookies are soft, chewy, and packed with a luscious caramel center that melts in your mouth! A perfect treat for caramel lovers.

Ingredients

For the Cookie Dough:
  • 1 cup (2 sticks) unsalted butter, softened
  • ¾ cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chocolate chips (optional, for extra flavor)
For the Caramel Filling:
  • 16 soft caramels (such as Kraft or Werther’s), unwrapped
  • 2 tablespoons heavy cream (for softer caramel)
For Topping (Optional):
  • Flaky sea salt

 


Instructions

Prepare the Cookie Dough:

  1. Mix Butter & Sugars:

    • In a large bowl, cream together butter, brown sugar, and granulated sugar until fluffy.
  2. Add Eggs & Vanilla:

    • Beat in eggs one at a time, then stir in vanilla extract.
  3. Combine Dry Ingredients:

    • In a separate bowl, whisk together flour, baking soda, and salt.
    • Gradually mix into the wet ingredients until combined.
    • Stir in chocolate chips (if using).

Prepare the Caramel Filling:

  1. Melt the Caramel:
    • Microwave caramels with heavy cream for 30 seconds, stirring until smooth.
    • Let cool slightly before stuffing.

Assemble the Cookies:

  1. Stuff with Caramel:
    • Scoop 2 tablespoons of dough, flatten it, and place ½ teaspoon of caramel in the center.
    • Wrap dough around the caramel, sealing it completely.
    • Place on a lined baking sheet.

Bake the Cookies:

  1. Preheat & Bake:

    • Preheat oven to 350°F (175°C).
    • Bake for 10-12 minutes, until edges are golden brown.
  2. Cool & Enjoy:

    • Let cool for 5 minutes, then sprinkle with flaky sea salt (optional).

Notes

  • Want extra gooey centers? Use Rolos or caramel-filled chocolates instead.
  • For a crunch, add chopped pecans to the dough.
