These homemade granola bars are soft, chewy, and loaded with oats, honey, and your favorite mix-ins like chocolate chips, nuts, or dried fruit. They’re easy to make with just a few pantry staples and way better than store-bought!

Ingredients

  • 2 1/2 cups old-fashioned rolled oats

  • 1 cup crispy rice cereal (optional, for extra crunch)

  • 1/2 cup peanut butter (or almond butter)

  • 1/2 cup honey or maple syrup

  • 1/4 cup brown sugar (optional, for extra sweetness)

  • 1 tsp vanilla extract

  • 1/4 tsp salt

  • 1/2 cup mini chocolate chips, dried fruit, chopped nuts, or a mix

Instructions

  1. Line an 8×8 or 9×9-inch baking pan with parchment paper.

  2. In a large bowl, combine oats and rice cereal (if using).

  3. In a small saucepan over medium heat, stir together peanut butter, honey, and brown sugar. Heat until mixture is smooth and begins to bubble slightly (about 2–3 minutes).

  4. Remove from heat and stir in vanilla and salt.

  5. Pour the warm mixture over the dry ingredients and stir well to coat everything. Let cool for a minute, then fold in chocolate chips or other mix-ins.

  6. Press the mixture firmly into the prepared pan using a spatula or your hands.

  7. Refrigerate for at least 1 hour before slicing into bars.

  8. Store in an airtight container at room temperature for up to 1 week, or in the fridge for longer freshness.

Notes

  • Press the mixture down firmly to help the bars hold together.

  • Add-ins are flexible: coconut flakes, sunflower seeds, flaxseed, or mini M&Ms all work great.

  • Make them nut-free by using sunflower seed butter.
