Grasshopper Pie is a creamy, minty no-bake dessert made with a chocolate cookie crust and a fluffy, marshmallow-mint filling, inspired by the classic cocktail.

Ingredients

  • 24 chocolate sandwich cookies, crushed
  • 1/4 cup unsalted butter, melted
  • 1 1/2 cups mini marshmallows
  • 1/2 cup whole milk
  • 1/4 cup crème de menthe liqueur
  • 2 tablespoons crème de cacao liqueur
  • 1 1/2 cups heavy whipping cream
  • Green food coloring (optional)

Instructions

  1. In a bowl, combine crushed chocolate cookies and melted butter. Press the mixture into the bottom and up the sides of a 9-inch pie dish. Chill in the refrigerator.
  2. In a saucepan over low heat, melt marshmallows with milk, stirring constantly until smooth. Remove from heat and let cool slightly.
  3. Stir in crème de menthe and crème de cacao. Add a few drops of green food coloring if desired.
  4. In a separate bowl, whip heavy cream to stiff peaks. Fold the whipped cream into the cooled marshmallow mixture until combined.
  5. Pour the filling into the chilled crust and smooth the top. Refrigerate for at least 4 hours or until set.
  6. Slice and serve chilled. Garnish with whipped cream or chocolate shavings if desired.

Notes

  • Make sure the marshmallow mixture is cool before folding in the whipped cream to prevent deflating.
  • Can be frozen for a firmer texture; thaw slightly before serving.
  • Use mint extract and green food coloring as a non-alcoholic substitute.
