  • ¼ cup plain Greek yogurt
  • 3 tbsp olive oil
  • 2 tbsp lemon juice (freshly squeezed)
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp salt
  • ¼ tsp black pepper
For the Tzatziki Sauce:
  • 1 cup plain Greek yogurt
  • ½ cucumber, grated and squeezed dry
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 clove garlic, minced
  • 1 tbsp fresh dill or mint, chopped
  • ¼ tsp salt
For Serving:
  • 46 pita breads
  • 1 cup cherry tomatoes, halved
  • ½ small red onion, thinly sliced
  • 1 cup lettuce, chopped (optional)
  • ½ cup feta cheese, crumbled (optional)
  • Lemon wedges, for serving

Instructions

  1. Marinate the Chicken:

    • In a bowl, whisk together Greek yogurt, olive oil, lemon juice, garlic, oregano, cumin, paprika, salt, and pepper.
    • Add the chicken and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 24 hours for deeper flavor).
  2. Make the Tzatziki Sauce:

    • In a small bowl, mix Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, dill, and salt. Stir well.
    • Cover and refrigerate until ready to serve.
  3. Cook the Chicken:

    • Heat a grill pan or skillet over medium-high heat.
    • Cook the chicken for 5-6 minutes per side, or until fully cooked and slightly charred.
    • Remove from heat and let rest for 5 minutes, then slice into strips.
  4. Assemble the Gyros:

    • Warm the pita bread in a dry skillet or microwave.
    • Add sliced chicken, tomatoes, red onion, and lettuce (if using).
    • Drizzle with tzatziki sauce and sprinkle with feta cheese.
    • Wrap up and serve with lemon wedges.

Notes

  • For extra crispy chicken, grill over an open flame or use a cast-iron skillet.
  • Swap out chicken for lamb, beef, or grilled veggies for a different variation.
  • Use store-bought tzatziki for a quicker version.
