Greek Lemon Rice Recipe

A bright and flavorful Greek lemon rice made with long-grain rice, fresh lemon juice, and aromatic herbs. A perfect side dish for grilled meats, seafood, or Mediterranean meals.

Ingredients

  • 1 cup long-grain white rice (such as basmati)
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups low-sodium chicken broth (or vegetable broth)
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon dried oregano
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions

  1. Rinse rice under cold water until water runs clear. Drain well.
  2. In a medium saucepan, heat olive oil over medium heat. Add onion and sauté until soft and translucent, about 3-4 minutes.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Stir in rice and cook for 1-2 minutes to lightly toast.
  5. Add chicken broth, lemon juice, lemon zest, oregano, salt, and pepper. Stir to combine.
  6. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until rice is tender and liquid is absorbed.
  7. Remove from heat and let sit covered for 5 minutes.
  8. Fluff rice with a fork, garnish with fresh parsley, and serve warm.

Notes

  • Use vegetable broth to make it vegetarian.
  • Pairs well with grilled chicken, lamb, or fish.
  • Add peas or chopped spinach for extra color and nutrition.
