Greek Pasta Salad is a flavorful and colorful dish combining tender pasta, fresh vegetables, olives, and feta cheese, all tossed in a tangy Greek dressing. Perfect for picnics, potlucks, or as a light main course.

Ingredients

  • 12 oz rotini or penne pasta
  • 1 1/2 cups cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 3/4 cup Kalamata olives, pitted and halved
  • 3/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 1/4 cup extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse with cold water to cool.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
  3. In a small bowl or jar, whisk together olive oil, red wine vinegar, oregano, garlic, salt, and pepper.
  4. Pour the dressing over the pasta salad and toss well to combine.
  5. Sprinkle with chopped parsley and refrigerate for at least 30 minutes before serving.

Notes

  • Best served chilled or at room temperature.
  • You can use whole wheat or gluten-free pasta if desired.
  • Store leftovers in an airtight container for up to 3 days.
