- 1/2 cup crumbled feta cheese
- 1/4 cup chopped red onion
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper, to taste
- 1 tbsp olive oil
- 4 burger buns
- 1 cup baby spinach or arugula
- 1 tomato, sliced
- 1/2 cucumber, grated
- 1 cup Greek yogurt
- 1 tbsp lemon juice
- 1 tbsp chopped fresh dill
- 1 clove garlic, minced (for tzatziki)
- Salt and pepper, to taste (for tzatziki)
- In a bowl, mix ground beef or lamb with red onion, minced garlic, oregano, salt, and pepper.
- Divide the meat into 8 equal portions. Flatten each and place a spoonful of feta in the center of 4 of them.
- Top with remaining 4 patties and seal edges to enclose feta.
- Heat olive oil in a skillet or grill over medium-high heat. Cook burgers for 5-6 minutes per side, until cooked through.
- While burgers cook, prepare tzatziki by mixing grated cucumber, Greek yogurt, lemon juice, dill, minced garlic, salt, and pepper.
- Toast burger buns if desired.
- Assemble burgers with spinach or arugula, tomato slices, and a generous spoonful of tzatziki sauce.
- Serve immediately.
