2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup unsalted butter, cold and cubed
1 cup shredded sharp cheddar cheese
1 (4 oz) can diced green chiles, drained
3/4 cup buttermilk (plus more for brushing)
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together flour, baking powder, baking soda, and salt.
Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Stir in shredded cheddar and green chiles until evenly distributed.
Pour in the buttermilk and mix until just combined. Do not overmix.
Turn dough out onto a lightly floured surface and pat into a 1-inch thick rectangle. Fold the dough over itself 2-3 times to create layers, then gently press out again to 1-inch thickness.
Use a biscuit cutter or glass to cut out biscuits and place them on the prepared baking sheet.
Brush tops with buttermilk and bake for 12-15 minutes or until golden brown.
Cool slightly and serve warm.
Notes
Use roasted green chiles for extra flavor.
Can be frozen before or after baking—reheat in the oven.
