Grilled Lamb Chops are tender, juicy, and full of rich flavor. Marinated in garlic, lemon, and rosemary, then quickly grilled, they’re a simple yet impressive dish. Perfect served with grilled veggies, salad, or a glass of red wine.

Ingredients

  • 8 lamb chops (rib or loin, about 1-inch thick)

  • 1/4 cup olive oil

  • 2 tbsp fresh rosemary, chopped (or 1 tbsp dried)

  • 3 garlic cloves, minced

  • Juice of 1 lemon

  • Salt and black pepper, to taste

Instructions

  1. Marinate the lamb:
    In a bowl or zip-top bag, combine olive oil, rosemary, garlic, lemon juice, salt, and pepper. Add lamb chops and coat well. Marinate at room temperature for 30 minutes, or refrigerate up to 4 hours.

  2. Preheat the grill:
    Heat grill to medium-high. Lightly oil the grates.

  3. Grill the chops:
    Remove lamb from marinade. Grill for 3–4 minutes per side for medium-rare (internal temp 130–135°F), or longer to desired doneness.

  4. Rest and serve:
    Let chops rest for 5 minutes before serving. Garnish with extra rosemary or lemon wedges if desired.

Notes

  • Great with mint chimichurri or balsamic glaze.

  • For even more flavor, use a garlic-herb rub or yogurt marinade.

  • Pair with couscous, roasted potatoes, or grilled asparagus.
