These Grilled Balsamic Chicken Lettuce Wraps are a light and flavorful meal perfect for warm weather or a quick weeknight dinner. Juicy, marinated chicken is grilled to perfection, then wrapped in crisp lettuce leaves and topped with fresh veggies and a drizzle of tangy balsamic glaze. They’re healthy, low-carb, and packed with flavor!
1 ½ lbs boneless, skinless chicken breasts
¼ cup balsamic vinegar
2 tbsp olive oil
2 garlic cloves, minced
1 tbsp honey
1 tsp Dijon mustard
Salt and pepper, to taste
1 head butter lettuce or romaine, leaves separated and washed
½ cup cherry tomatoes, halved
½ cucumber, thinly sliced
¼ red onion, thinly sliced
Balsamic glaze, for drizzling
Fresh basil or parsley, for garnish (optional)
Make the marinade: In a small bowl, whisk together the balsamic vinegar, olive oil, garlic, honey, Dijon mustard, salt, and pepper.
Marinate the chicken: Place chicken breasts in a zip-top bag or shallow dish. Pour the marinade over the chicken and refrigerate for at least 30 minutes, up to 4 hours.
Grill the chicken: Preheat grill to medium-high heat. Remove chicken from marinade and grill for 5–6 minutes per side, or until the internal temperature reaches 165°F (75°C). Let rest for 5 minutes, then slice thinly.
Assemble the wraps: Place a few chicken slices in each lettuce leaf. Top with cherry tomatoes, cucumber, and red onion.
Finish and serve: Drizzle with balsamic glaze and sprinkle with fresh herbs, if using. Serve immediately.
You can use grilled chicken thighs if you prefer a juicier cut.
