These Grilled Balsamic Chicken Lettuce Wraps are a light and flavorful meal perfect for warm weather or a quick weeknight dinner. Juicy, marinated chicken is grilled to perfection, then wrapped in crisp lettuce leaves and topped with fresh veggies and a drizzle of tangy balsamic glaze. They’re healthy, low-carb, and packed with flavor!

  • 1 ½ lbs boneless, skinless chicken breasts

  • ¼ cup balsamic vinegar

  • 2 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 tbsp honey

  • 1 tsp Dijon mustard

  • Salt and pepper, to taste

  • 1 head butter lettuce or romaine, leaves separated and washed

  • ½ cup cherry tomatoes, halved

  • ½ cucumber, thinly sliced

  • ¼ red onion, thinly sliced

  • Balsamic glaze, for drizzling

  • Fresh basil or parsley, for garnish (optional)

Instructions

  1. Make the marinade: In a small bowl, whisk together the balsamic vinegar, olive oil, garlic, honey, Dijon mustard, salt, and pepper.

  2. Marinate the chicken: Place chicken breasts in a zip-top bag or shallow dish. Pour the marinade over the chicken and refrigerate for at least 30 minutes, up to 4 hours.

  3. Grill the chicken: Preheat grill to medium-high heat. Remove chicken from marinade and grill for 5–6 minutes per side, or until the internal temperature reaches 165°F (75°C). Let rest for 5 minutes, then slice thinly.

  4. Assemble the wraps: Place a few chicken slices in each lettuce leaf. Top with cherry tomatoes, cucumber, and red onion.

  5. Finish and serve: Drizzle with balsamic glaze and sprinkle with fresh herbs, if using. Serve immediately.

Notes

  • You can use grilled chicken thighs if you prefer a juicier cut.

  • Add avocado, shredded carrots, or a dollop of hummus for extra flavor.

  • If you don’t have a grill, cook the chicken in a grill pan or on the stovetop.
