Grilled Bruschetta Chicken is a fresh and flavorful twist on a summer classic. Juicy grilled chicken breasts are topped with a zesty tomato-basil mixture and a drizzle of balsamic glaze. It’s a light, low-carb dinner that’s bursting with Italian flavor—perfect for warm evenings or entertaining guests.

For the chicken:

  • 4 boneless, skinless chicken breasts

  • 2 tbsp olive oil

  • 1 tsp Italian seasoning

  • Salt and black pepper, to taste

For the bruschetta topping:

  • 2 cups cherry tomatoes, halved (or diced roma tomatoes)

  • 1/4 cup finely chopped red onion

  • 1/4 cup chopped fresh basil

  • 2 cloves garlic, minced

  • 1 tbsp balsamic vinegar

  • Salt and pepper, to taste

To finish:

  • 1/4 cup shredded mozzarella or shaved Parmesan (optional)

  • Balsamic glaze, for drizzling


Instructions

  • Prep the chicken:
    Drizzle chicken with olive oil and season with Italian seasoning, salt, and pepper.

  • Grill:
    Preheat grill to medium-high heat. Grill chicken for 6–8 minutes per side, or until fully cooked and juices run clear (internal temp 165°F).

  • Make the bruschetta topping:
    In a medium bowl, combine tomatoes, red onion, basil, garlic, and balsamic vinegar. Season with salt and pepper. Let sit while chicken cooks.

  • Assemble:
    Top each grilled chicken breast with a spoonful of bruschetta mix. Sprinkle with mozzarella or Parmesan if desired.

 

  • Serve:
    Drizzle with balsamic glaze and serve immediately.

Notes

  • Great served over a bed of arugula or with crusty bread on the side.

  • To make it extra cheesy, top with mozzarella before the last few minutes of grilling to melt.

  • For meal prep, store bruschetta topping and chicken separately and combine just before serving.
