  • 1 lb boneless, skinless chicken breasts

  • 1 tablespoon olive oil

  • 1 teaspoon garlic powder

  • ½ teaspoon paprika

  • Juice of ½ lemon

For the salad:

  • 6 cups mixed salad greens (like romaine, arugula, or spring mix)

  • 1 avocado, sliced

  • 1 cup cherry tomatoes, halved

  • ½ cucumber, sliced

  • ¼ red onion, thinly sliced

  • ¼ cup crumbled feta cheese (optional)

  • 2 tablespoons chopped fresh cilantro or parsley

  • Optional: toasted nuts or seeds for crunch

For the dressing:

  • 3 tablespoons olive oil

  • 1 tablespoon red wine vinegar or lemon juice

  • 1 teaspoon Dijon mustard

  • ½ teaspoon honey

  • Salt and pepper to taste

Instructions

  1. Prep the chicken: In a bowl, combine olive oil, garlic powder, paprika, lemon juice, salt, and pepper. Rub the mixture onto the chicken breasts.

  2. Grill the chicken: Preheat a grill or grill pan over medium heat. Cook the chicken for 5–6 minutes per side or until fully cooked. Let rest for 5 minutes, then slice.

  3. Make the dressing: Whisk together olive oil, vinegar or lemon juice, Dijon mustard, honey, salt, and pepper in a small bowl or shake in a jar.

  4. Assemble the bowls: Divide greens among 2–4 bowls. Top with grilled chicken slices, avocado, tomatoes, cucumber, red onion, feta (if using), and herbs.

  5. Drizzle with dressing just before serving. Enjoy fresh!
