Grilled Chicken Caprese is a simple and elegant dish featuring juicy grilled chicken breasts topped with ripe tomatoes, fresh mozzarella, and basil. Finished with a drizzle of balsamic glaze, it’s the perfect combination of smoky, creamy, and tangy—all in one bite.

Ingredients

  • 4 boneless, skinless chicken breasts

  • 2 tbsp olive oil

  • 1 tsp Italian seasoning

  • Salt and pepper, to taste

  • 2–3 ripe tomatoes, sliced

  • 8 oz fresh mozzarella, sliced

  • 1/4 cup fresh basil leaves

  • Balsamic glaze, for drizzling

Instructions

  1. Prep the chicken:
    Rub chicken breasts with olive oil, Italian seasoning, salt, and pepper. Let sit while the grill preheats.

  2. Grill:
    Preheat grill to medium-high heat. Grill chicken for 5–7 minutes per side, or until internal temperature reaches 165°F.

  3. Add toppings:
    During the last minute of grilling, place slices of tomato and mozzarella on top of each piece of chicken. Cover grill briefly to melt the cheese.

  4. Serve:
    Remove chicken from grill. Top with fresh basil leaves and a generous drizzle of balsamic glaze.

Notes

  • Serve over arugula or pasta for a heartier meal.

  • For extra flavor, marinate the chicken in balsamic vinegar, garlic, and olive oil before grilling.

  • Use cherry tomatoes if slicing whole tomatoes isn’t ideal.
