Grilled Chicken Kafta is a Middle Eastern-inspired dish made with ground chicken, herbs, and spices, shaped onto skewers and grilled to juicy perfection. It’s a lighter take on traditional kafta, full of flavor and perfect for grilling season.

Ingredients

  • 1 lb ground chicken
  • 1 small onion, finely grated
  • 1/4 cup fresh parsley, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • 1/4 tsp ground cinnamon
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 tbsp olive oil (for brushing)
  • Wooden or metal skewers

Instructions

  1. Soak wooden skewers in water for 30 minutes if using.
  2. In a large bowl, combine ground chicken, grated onion, parsley, garlic, cumin, coriander, paprika, cinnamon, salt, and pepper. Mix well until all ingredients are fully incorporated.
  3. Divide the mixture into equal portions and shape each around a skewer to form sausage-like logs.
  4. Preheat grill to medium-high heat and lightly oil the grates.
  5. Grill the kafta skewers for 10–12 minutes, turning occasionally, until fully cooked and lightly charred.
  6. Remove from grill, brush lightly with olive oil, and serve hot with pita, hummus, or salad.

Notes

  • For extra moisture, add a tablespoon of yogurt to the mixture.
  • Serve with garlic sauce or tahini for added flavor.
  • Can be baked at 400°F (200°C) for 20–25 minutes if a grill is not available.
