1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
3 tbsp olive oil
2 tbsp lemon juice
2 garlic cloves, minced
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
Skewers (metal or soaked wooden)
Instructions
In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper to make the marinade.
Add chicken cubes to the marinade, toss to coat, cover, and refrigerate for at least 30 minutes or up to 2 hours.
Preheat grill to medium-high heat.
Thread marinated chicken onto skewers.
Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and nicely charred.
Serve hot with pita bread, tzatziki sauce, and your choice of vegetables or salad.
Notes
For best flavor, marinate chicken for a few hours or overnight.
Can be cooked on a grill pan or broiled in the oven if outdoor grilling isn’t available.
