For the lamb chops:

  • 8 lamb rib or loin chops (about 1-inch thick)

  • 2 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 tbsp fresh rosemary or 1 tsp dried

  • Salt and pepper, to taste

For the mint sauce:

  • 1/2 cup fresh mint leaves, finely chopped

  • 1/4 cup boiling water

  • 2 tbsp white wine vinegar (or apple cider vinegar)

  • 1 tbsp sugar

  • Pinch of salt

Instructions

  1. Make the mint sauce:
    In a small bowl, stir the chopped mint with boiling water. Let sit for 5 minutes. Stir in vinegar, sugar, and a pinch of salt. Set aside to cool while preparing the lamb.

  2. Marinate the lamb:
    In a small bowl, mix olive oil, garlic, rosemary, salt, and pepper. Rub the mixture over the lamb chops and let sit at room temperature for 20–30 minutes.

  3. Grill the lamb chops:
    Preheat grill to medium-high heat. Grill lamb chops for about 3–4 minutes per side for medium-rare (internal temp of 135°F), or until desired doneness.

  4. Serve:
    Let lamb chops rest for 5 minutes. Drizzle or serve with mint sauce on the side.
