Ingredients

Scale
  • 2 to 2.5 lb London broil (top round or flank steak)

  • 1/3 cup olive oil

  • 1/4 cup soy sauce

  • 2 tablespoons balsamic vinegar

  • 2 tablespoons Worcestershire sauce

  • 2 tablespoons lemon juice

  • 2 cloves garlic, minced

  • 1 tablespoon brown sugar

  • 1 teaspoon Dijon mustard

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon onion powder

  • Optional: chopped fresh parsley for garnish

Instructions

  1. Make the marinade:
In a medium bowl, whisk together olive oil, soy sauce, balsamic vinegar, Worcestershire, lemon juice, garlic, brown sugar, Dijon mustard, pepper, and onion powder.

  2. Marinate the steak:
Place the London broil in a large zip-top bag or shallow dish. Pour the marinade over it, seal, and refrigerate for at least 4 hours or overnight for best flavor.

  3. Preheat grill:
Heat your grill to medium-high (around 400–450°F). Remove steak from marinade and let sit at room temperature for 20–30 minutes while the grill heats.

  4. Grill the steak:
Grill the London broil for 5–7 minutes per side for medium-rare (130–135°F internal temp). Adjust time based on thickness and desired doneness.

  5. Rest and slice:
Remove from grill and let rest for 10 minutes. Slice thinly against the grain for the most tender texture.

  6. Serve:
Garnish with parsley if desired and serve with roasted veggies, salad, or potatoes.

Notes

  • The key to a tender London broil is marinating well and slicing thin against the grain.

  • Leftovers are great for sandwiches, wraps, or steak salads.

  • A meat thermometer helps nail the perfect doneness.
