Ingredients

Scale
  • 3 ripe peaches, halved and pitted

  • 1 tbsp olive oil (for grilling)

  • 4 oz arugula or mixed greens

  • 8 oz burrata cheese (2 small balls or 1 large)

  • ¼ cup fresh basil leaves, torn

  • 2 tbsp pistachios or sliced almonds (optional, for crunch)

  • Balsamic glaze, for drizzling

  • Salt and black pepper, to taste

Instructions

  • Preheat grill or grill pan to medium-high heat.

  • Brush peach halves lightly with olive oil.

  • Grill peaches cut side down for 3–4 minutes, or until grill marks appear and peaches are slightly softened. Let cool slightly, then slice.

  • On a serving platter or in a large bowl, arrange arugula.

  • Top with grilled peach slices, torn burrata, and fresh basil.

  • Sprinkle with nuts if using.

  • Drizzle with balsamic glaze and season with salt and pepper to taste.

  • Serve immediately.

Notes

  • No grill? Use a grill pan or sear peaches in a hot skillet.

  • Burrata can be swapped with fresh mozzarella if needed.

  • Add prosciutto for a salty, savory twist.
