3 ripe peaches, halved and pitted
1 tbsp olive oil (for grilling)
4 oz arugula or mixed greens
8 oz burrata cheese (2 small balls or 1 large)
¼ cup fresh basil leaves, torn
2 tbsp pistachios or sliced almonds (optional, for crunch)
Balsamic glaze, for drizzling
Salt and black pepper, to taste
Preheat grill or grill pan to medium-high heat.
Brush peach halves lightly with olive oil.
Grill peaches cut side down for 3–4 minutes, or until grill marks appear and peaches are slightly softened. Let cool slightly, then slice.
On a serving platter or in a large bowl, arrange arugula.
