Ingredients

  • 2 whole red snapper (about 1.5 lbs each), cleaned and scaled
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1 lemon, sliced
  • 1 tbsp fresh parsley or cilantro, chopped
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp chili flakes (optional)
  • Lemon wedges, for serving

Instructions

  1. Preheat grill to medium-high heat and oil the grates to prevent sticking.
  2. Rinse and pat dry the red snapper. Score the skin with 2-3 shallow cuts on each side.
  3. In a small bowl, mix olive oil, garlic, paprika, salt, pepper, and chili flakes (if using).
  4. Rub the mixture all over the fish, including the cavity. Stuff the cavity with lemon slices and herbs.
  5. Place the fish on the grill and cook for 5-6 minutes per side, or until the skin is crispy and the flesh is opaque and flakes easily with a fork.
  6. Carefully remove from grill and serve with fresh lemon wedges.
