4 salmon fillets (6 oz each)
2 tablespoons olive oil
Salt and freshly ground black pepper, to taste
4 tablespoons unsalted butter, melted
2 garlic cloves, minced
2 tablespoons fresh lime juice
1 teaspoon lime zest
1 tablespoon fresh chopped parsley or cilantro
Instructions
Preheat grill to medium-high heat. Lightly oil the grates.
Pat salmon fillets dry and brush with olive oil. Season both sides with salt and pepper.
In a small bowl, combine melted butter, minced garlic, lime juice, lime zest, and chopped herbs. Set aside.
Place salmon fillets skin-side down on the grill. Cook for 4–5 minutes per side, or until the salmon flakes easily with a fork.
During the last minute of grilling, brush the salmon generously with the garlic lime butter.
Remove salmon from the grill and drizzle with any remaining garlic lime butter before serving.
Notes
Use fresh wild-caught salmon for the best flavor.
