12 large fresh mushrooms (like cremini or white button)
4 oz cream cheese, softened
1/2 cup shredded cheddar cheese
1/4 cup grated Parmesan cheese
2 green onions, finely chopped
1 garlic clove, minced
1 tbsp chopped fresh parsley (or 1 tsp dried)
Salt and black pepper, to taste
Olive oil, for brushing
Prep the mushrooms:
Clean mushrooms and remove stems. Finely chop the stems and set aside. Lightly brush the caps with olive oil.
Make the filling:
In a bowl, mix cream cheese, cheddar, Parmesan, green onions, garlic, parsley, and chopped mushroom stems. Season with salt and pepper.
Stuff the mushrooms:

Grill:
