A delicious twist on the classic Reuben, this grilled turkey Reuben sandwich features tender turkey slices, tangy sauerkraut, Swiss cheese, and Thousand Island dressing on rye bread.

Ingredients

  • 8 slices rye bread
  • 8 oz sliced cooked turkey breast
  • 4 slices Swiss cheese
  • 1 cup sauerkraut, drained
  • 1/4 cup Thousand Island dressing
  • 2 tablespoons butter, softened

Instructions

  1. Spread Thousand Island dressing on one side of each slice of bread.
  2. On four slices, layer turkey, sauerkraut, and Swiss cheese. Top with the remaining bread slices, dressing side down, to form sandwiches.
  3. Spread butter on the outside of each sandwich.
  4. Heat a skillet or griddle over medium heat.
  5. Place the sandwiches in the skillet and cook until golden brown on one side, about 3-4 minutes.
  6. Flip the sandwiches and cook the other side until golden and the cheese is melted, about another 3-4 minutes.
  7. Remove from the skillet, slice in half, and serve hot.

Notes

  • Use well-drained sauerkraut to avoid soggy sandwiches.
  • Try adding a slice of tomato for a fresh twist.
  • For a crispier sandwich, press down gently with a spatula while grilling.
