Grilled watermelon is a unique and refreshing summer treat with a smoky twist. Lightly caramelized on the outside while remaining juicy and sweet inside, it’s perfect as a side, appetizer, or light dessert.

Ingredients

  • 1 small seedless watermelon
  • 2 tablespoons olive oil
  • 1 tablespoon honey (optional)
  • 1 teaspoon lime zest
  • 1 tablespoon fresh lime juice
  • Salt, to taste
  • Fresh mint leaves, for garnish (optional)

Instructions

  1. Cut watermelon into 1-inch thick wedges, leaving the rind on.
  2. In a small bowl, whisk together olive oil, honey (if using), lime juice, and lime zest.
  3. Brush both sides of the watermelon wedges with the mixture.
  4. Preheat grill to medium-high heat and lightly oil the grates.
  5. Place watermelon wedges on the grill and cook for 2–3 minutes per side, or until grill marks appear and edges are slightly caramelized.
  6. Remove from grill, sprinkle with a pinch of salt, and garnish with fresh mint leaves if desired. Serve warm or at room temperature.

Notes

  • Use a firm, seedless watermelon for best results.
  • Can be served with feta cheese for a savory twist.
  • Drizzle with balsamic glaze for extra flavor.
