Grinder Pasta Salad combines the bold, zesty flavors of a classic Italian grinder sandwich with tender pasta. Loaded with deli meats, cheese, crunchy veggies, and tossed in a creamy Italian dressing, it’s a hearty and crowd-pleasing side or main dish.

Ingredients

  • 12 oz rotini or penne pasta
  • 1/2 cup mayonnaise
  • 1/4 cup red wine vinegar
  • 2 tbsp olive oil
  • 1 tbsp Dijon mustard
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup shredded iceberg lettuce
  • 1/2 cup diced red onion
  • 1/2 cup sliced pepperoncini
  • 1/2 cup diced tomatoes
  • 1 cup diced deli meats (ham, salami, turkey)
  • 1 cup diced provolone or mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook pasta according to package directions until al dente. Drain and rinse under cold water. Set aside.
  2. In a bowl, whisk together mayonnaise, red wine vinegar, olive oil, Dijon mustard, Italian seasoning, garlic powder, salt, and pepper.
  3. In a large mixing bowl, combine cooked pasta, lettuce, onion, pepperoncini, tomatoes, deli meats, and cheeses.
  4. Pour dressing over salad and toss to coat thoroughly.
  5. Chill for at least 30 minutes before serving to let flavors meld.
  6. Serve cold and garnish with extra Parmesan or herbs if desired.

Notes

  • Best served the day it’s made to keep the lettuce crisp.
  • Use any combination of deli meats and cheeses to suit your taste.
  • Omit lettuce if preparing ahead and mix it in just before serving.
