This Ground Beef Fried Rice is a quick, easy, and budget-friendly meal, packed with savory beef, fluffy rice, eggs, and veggies in a delicious garlic-ginger soy sauce. Perfect for weeknight dinners, meal prep, or using up leftovers, this dish is ready in under 30 minutes!

Ingredients

  • 1 lb ground beef (85/15 for best flavor!)
  • 3 cups cooked and cooled rice (day-old rice works best!)
  • 2 tbsp vegetable oil (divided, for frying!)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, minced (or ½ tsp ground ginger!)
  • 1 cup frozen mixed vegetables (peas, carrots, corn, etc.)
  • 2 large eggs, beaten
  • 3 tbsp soy sauce (adjust to taste!)
  • 1 tbsp oyster sauce (adds depth, optional!)
  • 1 tsp sesame oil (for nutty flavor!)
  • ½ tsp black pepper
  • ½ tsp crushed red pepper flakes (optional, for heat!)
  • 2 green onions, chopped (for garnish!)

Instructions

Step 1: Cook the Ground Beef

  1. Heat 1 tbsp vegetable oil in a large skillet or wok over medium-high heat.
  2. Add ground beef and cook until browned, breaking it up as it cooks (about 5 minutes).
  3. Drain excess grease if needed, then push the beef to one side of the pan.

Step 2: Sauté the Aromatics & Veggies

  1. Add remaining 1 tbsp oil, then sauté onion, garlic, and ginger until fragrant (about 1 minute).
  2. Stir in frozen vegetables and cook for 2-3 minutes until softened.

Step 3: Scramble the Eggs

  1. Push everything to one side of the pan.
  2. Pour in beaten eggs and scramble until just set.
  3. Mix the eggs with the beef and veggies.

Step 4: Add Rice & Sauce

  1. Stir in cold, cooked rice, breaking up any clumps.
  2. Add soy sauce, oyster sauce, sesame oil, black pepper, and red pepper flakes.
  3. Stir-fry for 2-3 minutes, letting the rice absorb the flavors.

Step 5: Garnish & Serve

  1. Remove from heat and mix in chopped green onions.
  2. Serve hot with extra soy sauce or sriracha on the side!
